Oven-Fried Sand Dab with summer salad

Sanddabs, also spelled "Sand DAB," are a specialty of the region of the Pacific coast of America. These are small flatfish, most cooks grill only in oil. This recipe uses the old method of Spencer oven-roast, with a little less fat. But it is no less tasty because I slather on the fish before rolling in breadcrumbs. Homemade mayonnaise I serve this with a chunky tomato summer salad, avocado, corn and sweet onions. This recipe is for four people.

Total time: 47 minutes

Ingredients:

  • 8-12 pan-dress sand pads
  • 1 to 1 1/2 cups bread crumbs
  • 1 egg yolk
  • 2 t. Lemon juice
  • 1 t. Water
  • Center t. Kosher salt
  • 4.3 cup olive oil
  • 1 pound fresh tomatoes
  • 2 avocados
  • 1 ear of corn
  • The half Vidalia or other sweet onion, finely chopped
  • 2 T. chopped parsley
  • Salt and freshly ground black pepper
  • 2 T. olive oil
  • Juice of 1 lemon or 2 limes

Preparation:

. Make mayonnaise well, you do not have to mayonnaise - you can use store-bought, as long as it is good quality. But mayonnaise is easy to make and tastes better than home'll you give the instructions here.

In a bowl, egg yolk, 2 tsp lemon juice, teaspoon of water and half a teaspoon of kosher salt and mix well with a whisk.

Gradually 4.3 cup olive oil, stirring angry. You have to beat very fast and very slow oil: Once you have built a certain amount of oil, you can rest a little, then add the rest.

Your mayonnaise is bought yellow and sweeter than the white version in the store. It will also be more perishable, so they put in the fridge for now.

Preheat oven to 475 degrees.

Make the salad. Cut the tomatoes into pieces and then do the same with the lawyer, and put them in a bowl. Cover with lemon juice.

Bake for 6-12 minutes - you are looking for a golden color. No returns.

Leave to serve, take the fish stand a minute or two, and then organize one or two on a plate with golden color. The breading is not clear, but it will be salty and will lean pads to complement wet sand.

A rich white wine like Chardonnay Roussanne or butter is good with that, but is also a stock or beer.
