Ingredients:
- 1-2 pounds skate wings, flayed and networks
- 4 T unsalted butter
- Flour for dusting
- 1/4 cup white wine
- Salt
- 2 T chopped chives for garnish
Preparation:
Take skate wings from the refrigerator and lightly salted. Let stand for 15 minutes.
Heat a skillet over high heat for 3 minutes. Reduce the heat to medium-high and put 2 tablespoons of butter.
Meanwhile, dredge the skate wings in flour and shake off. Fry in butter over medium heat for about 2-3 minutes per side. Be careful when turning, unusual muscle structure makes it difficult to go without breaking.
Remove the skate wings in the oven and 2 tablespoons butter. Over medium heat until butter light brown in color. Add the wine - syringes. Scrape the bits that may have stuck to the ground and cook the alcohol, about 2-3 minutes.
Skate wing sauce, garnished with chives and serve immediately. This fits well with rice dishes or just mashed potatoes. For wine, try a Sancerre or a Greek Assyrtiko.
