Make quick and simple skate wing with brown butter

Skate wing with brown butter is the first way I learned to cook this strange shark parents. Saltwater anglers catch many runners, while perfectly cut open other fish and are tasty once you remove the hard axis of the cartilage and simmer - not boil over wing strips are not rubbery.

Ingredients:

Preparation:

Take skate wings from the refrigerator and lightly salted. Let stand for 15 minutes.

Meanwhile, dredge the skate wings in flour and shake off. Fry in butter over medium heat for about 2-3 minutes per side. Be careful when turning, unusual muscle structure makes it difficult to go without breaking.

Remove the skate wings in the oven and 2 tablespoons butter. Over medium heat until butter light brown in color. Add the wine - syringes. Scrape the bits that may have stuck to the ground and cook the alcohol, about 2-3 minutes.

Skate wing sauce, garnished with chives and serve immediately. This fits well with rice dishes or just mashed potatoes. For wine, try a Sancerre or a Greek Assyrtiko.
