Scallops are very impressive, but so easy to cook, you will not believe it until you do it yourself. The secret is to use a hot pan and do not move the scallops.

Marinate strawberries at least an hour in advance, but several hours (up to eight) is better. The slight bitterness of arugula makes a nice contrast to the sweet flavors of the dish, but spinach is a good alternative.
