Mix the flour with garlic powder.

Heat a large skillet over high heat for a minute or two. Add more - but not all - a quarter cup of oil. Start with a little more than half. Reduce the heat to medium-high and let it heat for 2 minutes.

Sprinkle the fish with seasoned flour, shaking off and fry in oil. Allow at least 2 of the 4 sides of the cube of fish to a golden brown. You can also just "kiss" the other edges of the heat keep the golden parts with tweezers, and press the sides of the baking hot oil for a few seconds.

For the salad, pour some poaching fish oil in a large skillet nice and hot. Reduce the heat to medium-high and add the corn, peppers, spring onions and garlic. To cook thoroughly, turning often, for 5 minutes.

Meanwhile, place the chopped tomatoes, lime juice and cilantro in a large bowl. Flake the fish with your fingers and into the bowl.

Sauteed Striped Bass with spring onions

It is a simple and easy recipe that screams spring. Stripers to come first in time in April, where I live, and I like them with ingredients of spring pair - in this case, onions, fried or steamed and grilled in foil. I use rice flour to the crust of the fish, as it is light and crispy. You can use regular flour if you want. You can also largemouth bass, smallmouth bass, cod California, walleye, whitefish or other farm to replace. This recipe is for two as a main course.

Ingredients:

  • 1 pound striped bass fillets
  • 1 cup rice flour
  • Salt
  • 1 pound green onions
  • 5 T. olive oil
  • 1 lemon, cut into pieces

Preparation:

Striped bass make good salt and set aside while preparing onions.

Light the grill.

Cut the onion and root pruning to medium green way down. Coat with 2 tablespoons olive oil and salt well. Place them on a baking sheet or aluminum foil and put them on the grill.

Keep an eye on the onions and remove when they begin to blacken. In foil wrap and let steam inside.

Dip striped bass fillets in flour and shake excess.

Greek Style with honey white seabass

I have a version of this bar recipe in one of my books on Greek cuisine, with shrimp instead of bass. I tried it with white bass California and was spectacular! The glaze is sweet, salty and slightly herbal ouzo. Not through the use of Asian fish sauce afraid - it's a little fish sauce like the ancient Romans, which was the precursor of Worcestershire sauce. If you do not have the white fish, use large shrimp or other fish with firm flesh, such as halibut, sturgeon, shark, swordfish, tilefish, or - if you find - Chilean sea bass from New Zealand or swordfish.

Preparation time: 15 minutes

Cooking time: 15 minutes

Total time: 30 minutes

Ingredients:

  • Lb fillets 1-2
  • Kosher salt
  • 1 cup flour for dusting
  • 1 T. garlic powder
  • A quarter cup of olive oil
  • Asian fish sauce 4 T. Worcestershire sauce 2 to T.
  • 2 T. olive oil
  • 2 T. honey
  • 2T ouzo or other anise liqueur
  • 1 tablespoon chopped fresh oregano
  • Freshly ground black pepper

Preparation:

Cut the fish fillet into cubes about 1 1/2 inches in diameter. Sprinkle with kosher salt on them.

Mix 2 tablespoons of olive oil, honey and fish sauce together, stirring vigorously for a minute or two.

Mix the flour with garlic powder.

Heat a large skillet over high heat for a minute or two. Add more - but not all - a quarter cup of oil. Start with a little more than half. Reduce the heat to medium-high and let it heat for 2 minutes.

Sprinkle the fish with seasoned flour, shaking off and fry in oil. Allow at least 2 of the 4 sides of the cube of fish to a golden brown. You can also just "kiss" the other edges of the heat keep the golden parts with tweezers, and press the sides of the baking hot oil for a few seconds.

You have to cook the fish in batches, if your base is too small. Apart from the surface set like the other fish. Even olive oil, if the book you need.

Remove all fish in a paper towel and let drain.

Pour in the ouzo and scrape browned bits with a wooden spoon. Add the honey mixture of olive oil, fish sauce and mix well. Boil until the entire surface of the mold, a mass of bubbles. Turn off the heat.

Serve over rice, garnished with oregano and black pepper. To drink, choose a stark white blank, cut through the sweetness of the glaze. A good choice would be a Greek Assyrtiko, a Pinot Grigio or Chenin Blanc to be a Sauvignon Blanc.

How to fillet flat fish (flounder, fluke, fluke)

  • 1/4 cup olive oil
  • Asian fish sauce and Worcestershire sauce 4 T. 2 T.
  • 2 T. olive oil
  • 2 T. honey
  • 2 T. ouzo or other anise-flavored liqueur
  • 1 T. chopped fresh oregano
  • Freshly ground black pepper

Preparation:

Cut the fish fillet into cubes about 1 1/2 inches in diameter. Sprinkle kosher salt on them.

Mix 2 tablespoons of olive oil, honey and fish sauce together Beat vigorously for a minute or two.

Sweet & Spicy beer steamed crab recipe ...

Here is a delicious way to add flavor to your crabs, crab legs or scissors if they are already cooked or raw - steamed with spicy beer!

An amber beer or "red" color is the best for this recipe; a depth of flavor gives, without being too intrusive.

Crab claws are increasingly available in markets. As the blue crabs that U.S. production is sustainable and sweet crab taste harvested beautiful. You can use this recipe for any kind of crab, though.

If they are not already, make sure that they break a little each leg or claw, so that the flavor can enter before cooking.

This recipe is good for 3 pounds of crab. Double or triple up when the recipe made.

Preparation time: 5 minutes

Cooking time: 15 minutes

Total time: 20 minutes

Yield: 3-4 snacks

Ingredients:

  • 1 bottle of amber beer (preferably flat)
  • 2 tablespoons brown sugar
  • 2 tbsp fish seasoning (such as Old Bay)
  • 1 tablespoon apple cider vinegar
  • 1 tsp black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 2-3 pounds scissors, crab legs or whole crabs

Preparation:

In a large terrace, bring beer, pot of sugar, fish, spices, vinegar and spices to a boil over medium heat. Add shrimp and mix well. Cover and steam for 5-7 minutes (10 to 15 for raw shrimp), a few times with stirring. Remove the shrimp and serve hot sprinkled with a little sea fruits extra spice if desired.

Makes 3-4 servings of sweet and spicy appetizer of steamed crab rock beer.

How to Clean the anchovies

If you bought anchovies, chances are, they are still together and needs to be cleaned. Do yourself a favor and clean at the same time - no time like anchovies deteriorate faster than any other fish.

It's easy to do, even if it may take a while if you have many dozens of anchovies. Begin by washing with cold water anchovies.

My ice shrimp, cucumber and yoghurt soup fit the bill. Steamed shrimp requires the stove to in less than 10 minutes, and you can always keep steam earlier in the day and in the fridge - was used in this way - in the refrigerator until ready to assemble the rest of the shell.

And then there are the other components: two cucumbers and yogurt have a real coo effect. If you add all the components, a rich filling meal with little effort you can have some of the sting of the summer.

A few things to note: You can use any pickles you want, but I prefer the English cucumbers. The taste is a little sweeter and a true taste of cucumber. Also, since you have the cucumber because of the sometimes bitter taste and hard texture of seed, they can spread, it is easier for the English series of very small seeds.

In addition, you can use any type of yogurt you prefer to use, but I like the Greek style. Greek yogurt is once or twice more than normal yogurt curious what in a decade, creamy texture. Also, because there is less liquid, the taste and robust features Hazel added.

May I suggest?

This is a brunch, lunch or light plate. For a robust meal, a small garden salad with a bright citrus vinaigrette. Some grilled asparagus or steamed, chilled and drizzled with a little olive oil and lemon juice, it would also be good. Serve crusty bread and butter rich pages.

White wine is the way to go with this dish; do something light and crisp. I like Vinho Verde, Sauvignon Blanc and Riesling semi dry with the soup. A red wine with this dish would be overwhelming, but a rose "would be a wonderfu option.

In the spirit of yogurt that you can pair it with a Greek myth beer or Aris.

Note, is kind of seafood you buy is very important; make sure it is a "best choice" or "good alternative" in terms of sustainability. The Seafood Watch program at the Monterey Bay Aquarium provides guidelines for procurement, including shrimp.
