Citrus Marinated Thai Style Halibut

Ceviche, pronounced suh-VEE-chay, seafood is "cooked" by the citric acid, in this case, lemon and lime juice. This is a dish from South America, but I use this recipe for ceviche flavors in Thai cooking often observed. California halibut I here, but this dish would also work well with snapper, rockfish, lingcod, sole and plaice, tuna or work yellow.

Preparation time: 3 hours, 15 minutes

Total time: 3 hours 15 minutes

Ingredients:

  • 1 pounds halibut
  • Lemon juice 1 cup
  • Asian fish sauce 2 T.
  • Juice of 2 lemons
  • 3 cloves garlic, finely chopped
  • 1-2 green chillies, such as cayenne pepper or thai
  • 3 spring onions, finely chopped
  • Mint chopped 2 T.
  • Coriander chopped 1 T.
  • Finely chopped 1 stalk lemon grass (white part only)
  • Sesame oil 1 T.

Preparation:

Cut Cut the halibut into small cubes. What is the size depends on the time pressure, the smaller the more it will "cook" in the citrus marinade. I love thick, so I cut my into cubes about half-3/4 inches.

In a plastic or glass container, pour in a cup of lemon juice and add the pieces of grouper. Stir fish wrap, and refrigerate at least 2 hours. You can leave them in until 8:00.

Once the fish of the lemon juice is marinated for several hours cast and the remaining ingredients. Mix well and to the fridge for 1-2 hours.

Serve cut into thin slices or lime in a cup of lettuce or Napa cabbage. It is a good appetizer for four or a main course for two.

Striped Bass Salad with Summer Vegetables

Here is a fresh seafood salad recipe with ingredients that are typically American: striped bass, corn, tomatoes and a touch of spice. What makes this particular recipe is how to cook the fish: you poach in olive oil, which makes the fish juicy. You can also shrimp, lobster, perch, cod, ling, haddock, tilapia or other fish firm enough to use for this recipe (Evita, fatty fish such as mackerel or mackerel dark). Not over the long cooking time or the amount of oil in this concern: You can not filter and reuse the oil, and the stove is turned off for most of the cooking.

Preparation time: 20 minutes

Cooking time: 1 hour 10 minutes

Total time: 1 hour 30 minutes

Ingredients:

  • £ 1 fillet skinless striped bass
  • Salt
  • Olive oil, at least 2 cups
  • Juice of one lemon
  • The nuclei of the two ears of corn or 1 cup frozen
  • 2-3 medium tomatoes, chopped
  • Finely chopped jalapeno chili 1
  • Cilantro or parsley 3 T.
  • 3 spring onions, chopped
  • 2-3 cloves garlic, minced
  • Freshly ground black pepper

Preparation:

Rinse and dry the fish. Sprinkle salt over them and set aside.

Heat 2-3 cups of olive oil in a heavy saucepan over medium heat until a drop of water thrown into the water boils quickly. If you have a cooking thermometer, you want the oil is about 220 degrees. Turn off the heat.

Slide the fish in oil, then shake the pan to make sure that the pieces do not stay on the ground. Stir for a few seconds, then cover the pan and reserve. The fish cook slowly, as oil retains heat very well.

Let the oil cool enough to your hand on the outside of the pot and feel a slight warmth. This takes about 45 minutes to an hour. And remove fish carefully on a plate.

To the salad, pour a little oil poaching fish in a large skillet and get it hot. Reduce the heat to medium heat and add the corn, peppers, spring onions and garlic. Thoroughly cook, turning often, for 5 minutes.

Meanwhile, put the chopped tomatoes, lime juice and cilantro in a large bowl. Flake the fish with your fingers and in the bowl.

Pour the contents of the pan into the large bowl, gently stir to blend and a little more olive oil, if desired. Grind some fresh black pepper over everything and serve.

Solo, is an excellent appetizer. Add bread or plain white rice and a main dish.

Chilled shrimp, cucumber and yoghurt soup ...

Sometimes it is too hot to be in the kitchen.

Chefs last knew where food and meals, prepared either early in the day when temperatures were cooler or foods that require very little planned served in the type of stove or in the oven.

I'm trying to follow this philosophy to me, because I live in South America, we find summer days with the air temperature at 100 degrees or more.

I also try to find themselves food are cool and refreshing.

My ice shrimp, cucumber and yoghurt soup fit the bill. Steamed shrimp requires the stove to in less than 10 minutes, and you can always keep steam earlier in the day and in the fridge - was used in this way - in the refrigerator until ready to assemble the rest of the shell.

And then there are the other components: two cucumbers and yogurt have a real coo effect. If you add all the components, a rich filling meal with little effort you can have some of the sting of the summer.

A few things to note: You can use any pickles you want, but I prefer the English cucumbers. The taste is a little sweeter and a true taste of cucumber. Also, since you have the cucumber because of the sometimes bitter taste and hard texture of seed, they can spread, it is easier for the English series of very small seeds.

In addition, you can use any type of yogurt you prefer to use, but I like the Greek style. Greek yogurt is once or twice more than normal yogurt curious what in a decade, creamy texture. Also, because there is less liquid, the taste and robust features Hazel added.

In terms of shrimp. On the way you can best roast for you and which components of the taste, but be careful not to hot liquid

Remember, though, that the other components - cucumber and yogurt - (. Albeit a little law could have) are softer, and a touch of Cajun seasoning can also

For this recipe, that's what I would do:

In a large pot, I poured a glass of white wine and half a glass of water. I halve a lemon, I'll adjust and the fruit. I peel and crush three cloves of garlic and throw them in. Sometimes I'll also add a few peppercorns.

I turn the heat on medium heat and get the liquid to a boil, add the shrimp and put them at the top. I dampen for 3-5 minutes; Shrimp should turn pink and firm. Once cooked, I use once a strainer to the shrimp and stuffed into a large bowl of ice water to remove to stop cooking.

Then let the shrimp, dry, cool and refrigerate until serving time. Me skin steam then removed prior to use. Keep these bowls promotions!

Another tip: buy shrimp for free in a fish market or grocery store and usually steam.

To serve evenly, spoon Soups ice between four bowls, three peeled shrimp, and floating fresh fruit in a little olive oil on the top with a small piece of dill.

May I suggest?

This is a brunch, lunch or light plate. For a robust meal, a small garden salad with a bright citrus vinaigrette. Some grilled asparagus or steamed, chilled and drizzled with a little olive oil and lemon juice, it would also be good. Serve crusty bread and butter rich pages.

White wine is the way to go with this dish; do something light and crisp. I like Vinho Verde, Sauvignon Blanc and Riesling semi dry with the soup. A red wine with this dish would be overwhelming, but a rose "would be a wonderfu option.

In the spirit of yogurt that you can pair it with a Greek myth beer or Aris.

Keep it for sustainable

Note, is kind of seafood you buy is very important; make sure it is a "best choice" or "good alternative" in terms of sustainability. The Seafood Watch program at the Monterey Bay Aquarium provides guidelines for procurement, including shrimp.

Peruvian Ceviche: A meal Citrus, Estival

As carpaccio, ceviche is (seh-VEE-chay) is a recipe for raw fish, like to play the modern chefs. It's basically fish "cooked" in the acid of the lemon and served with a cold beer on a hot day. The court is originally from Peru, and is considered a development of the Spanish escabeche, a dish marinated with vinegar. This recipe is for the classic Peruvian ceviche.

Preparation time: 3 hours, 15 minutes

Total time: 3 hours 15 minutes

Ingredients:

  • 1 pounds white fish (albacore tuna, flounder, snapper, grouper - everything you want to see in a sushi menu)
  • 1 cup lemon juice - lemon, if you can get
  • 1/2 cup lemon juice
  • 1/2 cup orange juice

Salt fish, then cover with lemon juice in a bowl of non-reactive (glass or plastic) with a lid. Onions and sliced peppers.

Chill in the refrigerator for at least 2 hours, perhaps as much as three hours - large pieces may take longer. If the fish is really top-quality food, which is fine, if the centers of the parts are still raw, beautiful.

To serve, spoon some of the onions and peppers and top with fish. Garnish with coriander.

The ceviche is so strong and acid that cries for beer and tortilla chips as a side dish - even if you do not find tortilla chips in Peru. In Peru, it is most commonly served with potatoes or sweet or white.

Anchovies make your own, or marinated white ...

Once the anchovies are cleaned and washed, the overlap in a non-reactive container (plastic, ceramic or glass) with kosher salt or pickling much. Ask a salt layer, a layer of anchovies and so on.

6 Seafoods to avoid risks

Some fish should not be eaten, because we have the most fishing these fish and other marine animals are in danger. The bluefin tuna, cod and Chilean sea bass are just a few popular examples. If you want to eat on the road again, it's time to give it a break now - here is a list of some fish particularly vulnerable and sustainable alternatives. Where I can, I will also give you some exceptions that otherwise threatens fish sustainably caught somewhere.

Bluefin Tuna 1

Japan, the Bluefin Tuna Research Station Pen pool, underwater view
Sue Flood / The Image Bank / Getty Images
Bluefin tuna is one of the tastiest - and most endangered species of fish in the sea. They are everywhere, where they live, over-exploited, is that all temperate oceans of the world. The popularity of sushi has very slow maturation in these huge fish; a tuna can lead to tens of thousands of dollars in big fish markets in the world. Alternatives would be yellow and bigeye tuna, often sold under the Hawaiian "ahi" name. Make sure you buy tuna by U.S. fishermen, the strict environmental standards are caught are not foreign fleets.

Snapper 2 Rojo

Red snapper is a great shot, but was defeated wherever something, especially in the Caribbean. From the perspective of the sample as reef fish is excellent - but not as nice as the non-replace Yellowtail Snapper or heavier gray. And frankly, to avoid the problem and purchase the black bars when you are on the East Coast or Pacific fish if you are in the West. If you need a real snapper, make sure that the varieties that buy around the Hawaiian Islands live - are not overfished. However.

Three. Lawyers Chile

A favorite of chefs, which is very strong, very white fish a prince in the kitchen - so much so that now endangered in all fisheries except one. Things were so bad that hackers actively running Chilean sea bass, like drugs. Seriously, avoid fish at all costs - unless you can get certified in the South Georgia Islands in New Zealand fish. If your fishmonger can not be said that the bar sells this type of fishing, give him a dirty look, and choose something else. Recommend striped bass or white bass Pacific as an alternative.

April. Halibut and cod

Avoid it at all costs halibut - is in a sorry state. And if you can be sure that your cod was caught by the hook, do not buy any. There is a small hook and line fishing for cod in New England, the non-negative stocks and should be supported. But the cod gill nets or caught worse, demersal fish should be left alone. Your best options are on the other coast of North America: Pacific halibut and cod Pacific are both nearly identical to their cousins in the Atlantic, or is in poor condition.

5 orange roughy.

This was the "it" orange and white 1980 light fish Tilapia clock was your day -. I was just brutally exploited deep ocean. The big problem is that this fish grows very slowly, may be about 100 years old! Thus, the clock decimated fish in 1980 suffered heals quickly. In addition, this fish is not so great in the kitchen; I think it's pretty boring. Use the tilapia or sole Pacific - folds of California, in particular - as an alternative or wrinkles.

6 Lobster

It's all about geography: California Lobsters are abundant, but the Caribbean are threatened. So if your Hummer is the Pacific or Australia, do not buy it.

Classic Pan Sauce for Fish

This is a classic sauce base that every cook fish and shellfish should be credited. This is a variation of a velvety sauce (Vel-oo-TAY), which is a deep red. Sounds to French? Bear with me, because it's a quick and easy way - delicious - simply prepared fish sauce. This recipe is for 4 people.

Give heat to medium-low and sprinkle flour and mix well with a fork or a wooden spoon. Let cook, stirring frequently, until light brown; They make a roux (pronounced "Roo" if you were wondering). It is very important not to burn!

When roux is light brown, the wine. There aerosol. Mix juices and scrape the bottom with a wooden spoon. This is important, so is everything.

You can get a good piece of thicker, so add the broth and mix well. Bring to a boil over high heat.

A word to the action. Suitable for TV use, ie, shrimp broth with shrimp, lobster, lobsters, fish fish populations. You can always another business sub if you need, but adding the proper actions that makes the dish better step. (To make instructions for storage are below).

If the sauce is reduced by half, a little salt to taste and even more if needed.

The sauce is ready when it to cover the back of a spoon, or if a couple of seconds it takes to fill the wooden spoon through the center of the pan until after the drawing. If you really want to get fancy, pour the sauce into a fine mesh sieve before serving.

Salt fish, then the butter into thin pats and throw cut in haddock fillets. Top with a pinch of bread crumbs.

Roast for 10 minutes per inch of fish, based on the way it is wide at the widest point. It will take at least 5 minutes, even for fine nets as unique.

Remove and grind black pepper over the fish, add the butter, if desired, and serve hot with lemon wedges. I love crusty bread and a simple salad with this recipe go.

To drink? Chardonnay would be good, as if a bright white as Italian Pinot Grigio.

Russian Spicy Crab

Black cod Cooking: A tempting treats

Silky and rich, black cod is a hidden delight:

Sable better than "smoked sable" delis in New York, or "smoked black cod" in the Pacific Northwest known. In California, often referred to as "butter". The reason is simple: a few fish so silky rich in omega-3 as uploaded black cod or cod are black.

This deep house predator is one of only two fish of its kind; the other is the skill fish. They live in the sea and have been found at depths of more than a mile below the surface. His skin is dark gray and the fish themselves do not look good. But this fish is like a diamond ring on a light brown color.

Sable live only in the North Pacific; Most are caught in the Bering Sea. Fortunately, they are abundant, and because the taste of sand and appearance - otherwise the texture - they are very similar to Chilean sea bass are sand is environmentally superior to the options bar, which is threatened in some fisheries.

In the kitchen, the black cod a striking appearance Yin-Yang offer - creamy white flesh with black leather set.

A key Preparation Note: This fish has large bone nails, the small bones that run along the center line of the curved fish. You must, before proceeding be removed. Do it with a needle nose pliers.

The sand is extremely versatile. Its fat content makes it an ideal candidate for smoking; This also helps to forgive the novice cook. The fat acts as a buffer against overcooking. But the black cod shines in other ways, too:

  • As sushi or sashimi. Bull as fat tuna or salmon belly sushi restaurants? You will love the raw herring. Fancy dress is also on the table with a touch of lemon Meyer and sea salt. Do not use the black cod for ceviche, but - the court goes best with lean fish.
  • On the grill. Again, fat is a savior here. It allows you a fillet of sand on a hot grill, without worrying too much about this Turing jerky in fish if you look too long to beat away. But texture is, you have to use a cage or at least well-oiled grill.
  • Toast. A simple jump you can see the depth of the black cod, which did a rich and leaner than lean fish mouth offers to enjoy.
  • Confit. Yeah, slowly poached in olive oil or another oil. As the slow poached tuna in olive oil? You will love the black cod.

How smelled fried spinach with garlic

A classic way of cooking melt is to fry. Many people use the dough, and I like the light tempura halibut times. But you can still easily turn with only dredging in flour and go in olive oil. I closed my Swiss chard and garlic, and I work very well with the melt; You can also use spinach or kale. Figure 6-8 melt per person for an appetizer, two times for a main course. I serve this with the head - these fish are so small, everything is edible - but do not hesitate to behead them if you want. Fresh anchovies are also excellent cooked this way.

Preparation time: 15 minutes

Cooking time: 15 minutes

Total time: 30 minutes

Ingredients:

  • Roch fresh or thawed 3-6 dozen, depending on your appetite
  • The kosher salt
  • Olive oil for frying, 1/4 cup
  • --------------------------
  • 1 cup whole wheat flour (can substitute all purpose)
  • 1 T. kosher salt
  • 1 t. Garlic powder
  • 1 t. Cayenne (or more to taste)
  • 1 t. Mustard powder
  • 1 t. freshly ground black pepper
  • --------------------------
  • 1 bunch Swiss chard, about 2 pounds
  • 1 T. garlic powder
  • Pinch of kosher salt
  • --------------------------
  • 1-2 lemons for decoration

Preparation:

Ask seasoned flour Mix all ingredients. You have no overwhelming taste - spices are there to emphasize the fish, not hide.

Ask your smell on a plate and salt.

Heat a large skillet over high heat for a minute or two. Reduce the heat to medium-high and add olive oil enough to cover the bottom of the pan 1/8 inch. You do not want the pool smelling oil. Let this hot oil for 2-3 minutes, or until you see that it starts to affect the surface.

While the oil-heating, and keep in flour melt it in a dry place. Dispose of paper towels, the emptied later.

When the oil is hot, place the melt in a layer with space between each and fry over medium heat for 2 minutes. Turn and cook for a minute, maybe two.

The trick here is to make the best out of the kitchen, on the one hand, giving you enough golden crust. You give the other side less time because they do not fish within the crust enough gold to be baked.

Ask a melt to the side and add the chard. Turn and stir constantly while sprinkling garlic powder and a little salt. Chard gets rid of a lot of water, so if this is the case, the heat to high, and stir until they are soft - about 3 minutes.

To serve, spoon a bit of spinach and arrange on smelt. Serve with lemon slices for a little acid.

What to Drink? Hoppy beer or lager is perfect here, like a sparkling wine like Prosecco. You can also go with a bright white; I like white or Chenin Verdelho.

What makes this particular stew is a combination of seafood, spicy and sweet peppers and a combination of herbs. Good balance of fish is important in this recipe, but you can sub in chicken broth or water. I use baby octopus, striped bass, baby shrimp and scallops in this version, but the mussels, crabs, any firm fish, or really any other seafood - so make sure you have variety. This recipe is for 4-6 as a main dish.

Once the octopus is tender, add the tomatoes, shrimp, fish and scallops, then add half of the parsley. Boil Boil for 4-5 minutes.

Add parsley and remaining basil. Mix well and serve.

This stew really need quality crusty bread and a good white wine. A perfect choice would be a Spanish or California Albariño, but Verdelho, Pinot Gris, Riesling dry or Italian Grillo would be all right, as well as a Greek Assyrtiko. If you are a beer drinker, a light Belgian beer would be nice too

How to fillet a flat fish (sole, flounder, fluke)

Well, you make your first cut with a steak knife. Should always be at an angle just behind the head of the "back", ie the side without the courage. In order to be a little more meat. Take this shot through the tail. Certainly not to cut through the spine. Would you like to reduce the spine.

The way to do this is to reduce first cut, then turn the knife toward the tail of the fish and pull on the spine.

Will you do it all the time? Not until you've done a few dozen fish. But keep at it.

To remember One tip: Meat on the banks of the network is not very useful. Grain is thin and goes in a different direction to the main thread. This means you can run a knife around the edges of the network, get a slightly faded edge and not to panic. We will clean the threads later.

Sicilian tuna salad with capers and olives

Some of the best canned tuna in the world comes from Southern Italy - so good tuna, it would be a sin, with mayonnaise as if you were to mix with regular canned tuna. Tilapia: a blank slate for the culinary creations

Tilapia is a Clean Slate Cooking:

Tilapia pronounced tuh-LAP-ee-yah, he is most cultivated fish in the world. Fallback salmon and catfish in the United States, but only because tilapia is a tropical fish.

Yes, that's the kind of tropical fish: Tilapia are cichlids such as Oscars or African cichlids you see in the pet store. Ate once at school (my friend had graduated and left to go his tank, and that's huge. Okay, I was hungry ...)

Tilapia is becoming more popular because it is relatively cheap taste, neutral, and is one of the most sustainable fish at all. Tilapia are omnivorous, eating insects, plankton and plants, which in turn increases the same friendly environment with such intensity.

Tilapia is native to Africa, where they were grown - perhaps by the ancient Egyptians. Today, most are grown in Latin America, China, Indonesia, and in our southern states. Are extremely invasive that they can survive, but die when the weather gets colder water below 50 degrees.

A typical tilapia is between 1-2 pounds, and are almost always sold as fillets without skin. Find swim in restaurants and markets in Asia, because tanks shall not tolerate predatory. You get to choose who you want to fish in these cases, and will be available on site. Very sporty.

What flavor tilapia? Well ... not much. It is very thin, very white and very rich in protein. And it has almost no taste. I personally find it boring. Give me a rich, fatty tuna or even an anchovy each day. Tilapia is not a "suspect", which is why it is so popular in the United States.

As a chef, think tilapia as a blank slate for every recipe you use. Unlike most fish, where simplicity is the rule, tilapia with nothing else on the disk of the star will be, so this is where this great recipe salsa sauce or a murderer or cooked vegetables selected perfectly damped.

Tilapia works well with Asian dishes - crispy fried whole thing with a spicy sauce Sichuan Rippin - and is ideal for fish tacos.

How to cook? Tilapia is delicate, so better fried, steamed, baked or grilled, it is. Do not eat raw, and does not burn.

Note: You do not find many recipes that are specifically for this site tilapia fish because recipe works well with all kinds of fish fillets. Just find a recipe thread - and little independent of the Tilapia Recipe - recipe or fish, if you get one like that. Think of it as the universal cuisine, fish batter.

The use of different types of flour for cooking fish ...

I like most of my steaks fish dusted with flour, fried until crisp outside: Apples flour well and easily create a subtle crust on the fish.

In general, regular use of all-purpose flour, and is a good way to start - but all you need to do is to spend your flour very different patterns of texture and flavor to a simple dish elsewhere to create.

For example, the use of chickpea flour dish of fish or shellfish Indian or Mediterranean Sea. It is a common meal is used there, and give you a warm dark brown, earthy taste and. You can buy chickpea flour in most large supermarkets, markets or ethnic online.

Fried fish and seafood Asia? The use of rice flour is. Lighter and crisp roast most other flours. It is a necessity in my tempura batter.

Do you have a richer flavor filler want? Use rye or barley flour. It is heavier good tasting food with fatty fish such as herring, mackerel, horse mackerel or taken over. I will also use this flour sometimes when I used in a kitchen, flour, such as Scottish, German and Scandinavian cooking.

Material properties, too. You want something cool, but wheat flour or stone ground cornmeal not use as wheat semolina Both are wheat flour, but not too fine?. Semolina is another way, too.

So the next time you think a piece of fish on fly, give a moment to ask a special meal if you want things jazz - another flour and cooking oil may otherwise be transported as a new kitchen just like that. Think dusted about the difference between a piece of halibut with flour and fried common compared to the same halibut dredged in corn oil in the rice flour and fried in sesame oil? It is a different animal.
